Meals on the Go: How a Passion for Cooking Led to a Dartco Driver Becoming a Published Author

When you’re on the road, there is no knowing when your next meal might be. You can pass truck stop after truck stop and sometimes you have to deliver and wait over the dinner hour. Sometimes your breakfast time in the morning is when you’re already on the road to the first stop for the day. It’s hard to have a set schedule for eating when you are a truck driver.
Pat Churchey, a Dartco driver for over seven years, knows this feeling all too well. After being on a schedule of not knowing when her next meal was going to be and tired of the same options at the truck stops, she went searching for a cookbook that was oriented for truck drivers. Great idea, right? One would think so. However, Pat searched endlessly for a cookbook and she just couldn’t find one that fit her needs or desires. That’s when she had the idea to write Traveler’s Cookbook.
Now available for purchase from Amazon and Barnes & Noble, Pat’s cookbook has taken off. “I used to have my brothers test the recipes when they were on construction sites and they would make the food on the floor of their pickup truck. All meals can be made easy if you have the proper ingredients and equipment,” Pat explained.
In Traveler’s Cookbook, Pat has a variety of recipes to help keep your stomach full morning, noon, and night. From hamburgers to hot dogs and buffalo wings to beef stew, there is something for everyone. “The recipes are written in a way that anyone could make the recipes. It explains every step in the process and truly shows that anyone can cook,” Pat said.
